Purple Sweet Potato Mochi Rolls

Ingredients

Purple Sweet Potato Mochi:
190g milk of choice
15g of Suncore Foods® Purple Sweet Potato Powder dissolved in 45g water
110g glutinous flour
25g cornstarch
25g sugar of choice
20g butter of choice

Filling:
180g cream cheese room temperature
60g whipping cream
30g sugar of choice

 

Directions

1. Mochi – Begin by combining all ingredients, excluding the butter, in a large bowl. Thoroughly mix the ingredients. Gradually add the purple sweet potato milk and whisk until a smooth consistency is achieved. Strain the mixture to eliminate any lumps, then transfer it to a dish or bowl, covering it with wrap and puncturing a few holes using a toothpick. Place the bowl into a steamer set to medium-high heat for 25 minutes. Once done, turn off the heat and add the butter. Allow the mixture to cool down, then knead the dough until it is smooth.

2. Filling – In a mixing bowl, beat the cream cheese and sugar until a smooth and creamy texture is attained. Add the whipping cream and blend until smooth.

3. Assembly – Dust the work surface with rice flour or desiccated coconut. Roll out the dough into a thin rectangle. Spread the filling onto the dough and proceed to roll up the mochi. Allow the rolled mochi to set in the freezer for a period of 10 minutes. Employ a thread to neatly cut through the roll, and afterwards, savor your Purple Sweet Potato Mochi.
