Colorful Crystal Glutinous Rice Balls

For these splendid crystal balls, a mix of Suncore Foods® Blue Butterfly Pea Powder, Emerald Pandan Leaf, and Pink Pitaya Powders was added to create the dough. Ingredients

Crystal Glutinous Rice Balls:
150g tapioca flour
10g tapioca flour for dusting your hands
90 ml boiling hot water
15g icing sugar (adjust as needed)

Colorful Chocolate Filling:
13 your choice of sweet white chocolate chips melted down
40 ml warm water
A small amount of vegetable oil
Suncore Foods® Blue Butterfly Pea Powder
Suncore Foods® Emerald Pandan Leaf Powder
Suncore Foods® Pink Pitaya Powder

Brown Sugar Ginger Goji Soup:
50g sliced ginger
6 cups water
1/3 cup Suncore Foods® Goji Berries
215g brown sugar or yellow rock sugar or sugar of choice

 

Directions

1. Brown Sugar Ginger Goji Soup — In a large pot, add water, sliced ginger, sugar, and Suncore Foods® Goji Berries. Cover with a lid. Bring it to a boil, then reduce to a rolling simmer for 30 minutes. Set this aside to enjoy.

2. Crystal Glutinous Rice Balls — In four separate bowls, add 50g of tapioca flour and 5g of icing sugar to each bowl. Next, pour 30ml of boiling water into each bowl. Whisk until a dry dough ball forms. The dough should not be sticky and should feel dry to the touch. If it is too sticky, add a bit more tapioca flour and mix until it is no longer sticky. Roll each dough into a log that is 1 inch thick, then cut the log into 1-inch-wide pieces. Roll each piece into a ball approximately 1 inch wide. Coat with additional tapioca flour to prevent sticking, then place them on parchment paper.

3. Colorful Chocolate Filling — In a double boiler, melt your choice of sweet white chocolate over hot water, adding a small amount of vegetable oil. Divide the melted chocolate into three bowls. Sprinkle Suncore Foods® Powders of each color directly into the bowls, stir, and blend well. Check the chocolate’s consistency; it should fall off the spoon easily. Pour the colored chocolate into molds using a spoon. Transfer the molds to the freezer and let the chocolate set.

4. Assembly — Make a well in the center of each dough ball to form a bowl shape with your fingers. Place the colored chocolate in the middle of the dough bowl and gently press the dough over the chocolate. Seal the opening and roll the ball between your palms until it is smooth. Place on a plate, cover with plastic wrap, and continue this process until all the dough is used.

5. Cooking the Colorful Crystal Glutinous Rice Balls — In a large pot, bring 1.5 liters of water to a boil. Once boiling, use a spoon to carefully place the rice balls into the water. Stir for about 1 minute to prevent the balls from sticking to the bottom of the pot. Once they begin to float, you can cover the pot with a lid. When the water boils again, add 1.5 cups of water and cover. When the water boils a second time, reduce the heat to medium and let it cook for 2-3 minutes, until the balls have noticeably increased in size and are floating.

6. Once cooked, remove as many colorful crystal glutinous rice balls as desired in batches and serve them with the sweet brown sugar ginger goji soup. Enjoy!
