Red Beet Tofu Veggie Medley Rice Bowl

This brightly seasoned filling & flavorful restaurant-style Red Beet Tofu Veggie Medley Rice Bowl is the absolute best. It's quick and easy to make, customizable with any of your favorite mix-ins, and so irresistibly delicious incorporated Suncore Foods® Red Beet Powder. Adding some extra color to your food is a delicious way to bring a little more magic to your everyday; and now, you can start do it with your rice bowl! The result is a mouthwatering yummy presentation.


Ingredients

Rice:
1 cup dry white rice
1 tbsp sesame oil
Pinch of salt
1 tbsp Suncore Foods® Red Beet Powder

Tofu:
1 16 oz. package extra firm tofu, drained and pressed
1 tbsp cornstarch
1 tsp salt
2 tsp Suncore Foods® Red Beet Powder
1 tbsp sesame oil
1 head of broccoli, diced


For garnish: thinly sliced carrot, scallions and sesame seeds

 

Directions

1. Preheat oven to 375˚F.

2. Toss diced tofu in sesame oil, then toss in cornstarch, salt and Suncore Foods® Red Beet Powder. Transfer to baking sheet along with diced broccoli and bake for 20-25 minutes, until crispy and browned.

3. Meanwhile, bring slightly more than two cups of water to a boil in a small saucepan.

4. Rinse the rice until the water runs clear. Heat a separate saucepan to medium. Add the sesame oil, rice, salt and Suncore Foods® Red Beet Powder and stir well. Add the two cups of boiling water. Bring to a boil, then reduce the heat to low, cover and simmer for 10 minutes. After 10 minutes, turn off the heat, but keep the pot covered.

5. Serve tofu and broccoli over rice and garnish with thinly sliced scallions, carrots, sesame seeds (and optional hot sauce).
