Vanilla Rainbow Ice Cream
Let’s add some rainbow vibes to your midweek! Today we are whipping up a magical, all-natural Vanilla Rainbow Ice Cream that tastes like sunshine and looks like a work of art. Why use artificial dyes when you can color your food with nature's superpowers? We achieved these gorgeous, vibrant hues using 100% plant-based magic from the Suncore Foods® powders – Autumnal Baked Yam Sweet Potato Powder, Blue Butterfly Pea Powder, Purple Sweet Potato Powder, and Ruby Red Radish Powder. 2 cups (480g) heavy cream
1 can (14 oz) sweetened condensed milk
1 tablespoon vanilla bean paste or vanilla extract
¼ teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon Suncore Foods® Autumnal Baked Sweet Potato Yam Powder
3 teaspoons of Suncore Foods® Blue Butterfly Pea Powder
3 teaspoons of Suncore Foods® Midori Jade Matcha Powder
1/2 teaspoon of Suncore Foods® Ruby Red Radish Powder
2 1/2 teaspoons Suncore Foods® Purple Sweet Potato Powder

1. In your mixer with the whist attachment on medium low whip the heavy cream and
Suncore Foods® Blue Butterfly Pea Powder to stiff peaks.
2. In a separate bowl, mix the condensed milk, vanilla, and salt.
3. Fold the whipped cream into the condensed milk mixture in 2–3 additions.
4. Divide the mixture into five small bowls.
5. Whisk in the Suncore Foods® Powders, let’s stand for 10 minutes then whisk again. Half teaspoon of
Suncore Foods® Ruby Red Radish Powder for red/pink. Half teaspoon of turmeric and half teaspoon of
Suncore Foods® Autumnal Baked Sweet Potato Yam Powder for yellow. 3 teaspoons of
Suncore Foods® Midori Jade Matcha Powder for Green. 3 teaspoons of
Suncore Foods® Blue Butterfly Pea Powder for blue 2 1/2 teaspoons of purple,
Suncore Foods® Purple Sweet Potato Powder for purple.
6. Transfer to your loaf pan. The method used was from left to right rainbow order then from right to left rainbow order in about 1 to 2 teaspoon blobs. Tap the loaf pan on the counter to release air bubbles then using a skewer make a horizontal zigzag pattern as well as a vertical zigzag pattern. Do this only once or the colors will muddy.
7. Cover and freeze for at least 6 hours, preferably overnight.
