Swirl Pink Pitaya Lemon Goji Berry Bars

Ingredients

Goji Lemon Bar:
10 tbsp unsalted butter
3/4 cup white chocolate chopped
1 1/2 cups granulated sugar
3 tbsp lemon zest
3 large eggs and one egg yolk
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp salt
1/2 cup Suncore Foods® Goji Berries

Pink Pitaya Lemon Glaze: ⁣
1 tbsp Suncore Foods® Pink Pitaya Powder
4 tbsp lemon juice ⁣
1 cup powdered sugar

Directions

1. Goji Lemon Bar — Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and set aside. In a pot over medium-low heat, melt the butter and chopped white chocolate, stirring frequently to prevent the chocolate from seizing. Once fully melted, remove from heat and let cool. In a mixing bowl, combine the granulated sugar and lemon zest. Add the eggs and egg yolk, then whisk until well incorporated. Pour in the cooled butter and white chocolate mixture along with the vanilla extract. Whisk until smooth and well combined. Sift in the flour and salt, then gently fold the mixture using a spatula or wooden spoon until just combined. Pat dry the soaked goji berries with a paper towel and fold them into the batter. Transfer the batter to the prepared pan, smoothing the top with a spatula. Bake for 30–35 minutes or until the edges are golden brown. Remove from the oven and let the brownies cool completely in the pan on a wire rack before adding the glaze.

2. Pink Pitaya Lemon Glaze — In a small bowl, mix the pink pitaya powder with lemon juice. Gradually add the powdered sugar, whisking until smooth and pourable. Adjust consistency by adding more powdered sugar if too thin or more lemon juice if too thick. Pour the glaze over the cooled brownies and spread evenly with an offset spatula. Let it set before slicing and serving.
