Pistachio Matcha Berry Chia Jam Sandwich Cookies

What a match-a-made in heaven! They are the perfect treats that you can enjoy during anytime of the day! Made these delightful cookies using our Suncore Foods® Midori Jade Matcha Powder & Chia Seeds, and we love them so matcha!
Ingredients
Pistachio Matcha Cookies:
120g all purpose flour
60g pistachios, ground
7.5g Suncore Foods® Midori Jade Matcha Powder
50g dairy free butter
32g sugar of choice
3 tbsp soy milk
1 tsp vanilla extract
1/4 tsp salt
Raspberry Chia Jam:
1 cup homemade or store bought jam
1 tbsp Suncore Foods® White Chia Seeds
Directions
1. Pistachio Matcha Cookies — In a large bowl cream together sugar and butter. Add in flour, ground pistachio, Suncore Foods® Midori Jade Matcha Powder, milk, vanilla. salt and mix until well combined. Wrap cookie dough with cling wrap and refrigerate for 20 mins. Preheat oven to 170c. Lightly flour work surface and rolling pin. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake for 8-10 minutes until lightly brown at the edges. Allow the cookies to cool on the pan for 5 minutes before transferring to a wire cooling rack.
2. Raspberry Chia Jam — Place the homemade or store bought jam into a saucepan over a medium heat. Remove from the heat and allow the mixture to cool a little before adding the Suncore Foods® White Chia Seeds. Transfer the chia jam to a jar and allow it to cool completely. Once the jam has reached room temperature, transfer it to the fridge for an hour to set before assembly.
