Pink Pitaya Chia Yogurt Popsicles

Ingredients

Makes 4 Large Popsicles

Chia Layer Ingredients:
¼ cup + 2 tbsp vanilla oat milk
2 tbsp Suncore Foods® Black Chia Seeds
2 tbsp dairy-free vanilla yogurt
1 tbsp maple syrup (optional – adjust as per yogurt sweetness)

Pink Pitaya Yogurt Layer Ingredients:
1½ tsp Suncore Foods® Pink Pitaya Powder
2 tbsp vanilla oat milk
1 cup dairy-free vanilla yogurt
1-2 tbsp maple syrup (optional – adjust as per yogurt sweetness)

Equipment Needed: 4 large popsicle molds


Directions

1. Chia Layer — Combine chia layer ingredients and set aside for 10-15 minutes (stir once or twice), until the chia seeds activate and the mixture is creamy.

2. Pink Pitaya Yogurt Layer — Dissolve Suncore Foods® Pink Pitaya Powder into 2 tbsp of milk. Combine the Pink Pitaya-milk mixture with remaining ingredients.

3. Assemble Popsicles — Spoon each layer into popsicle molds in patches. Start with one corner of the mold and add 1 spoon (spoon size as per preference) of the creamy chia layer. Add 1 spoon of the pink pitaya yogurt next to the chia mixture. Continue this process until the mold is full.

4. Follow step 3 for the remaining molds and freeze overnight.
