Ingredients

Cheesecake Base:
130g shortbread cookies
70g unsalted butter room temperature

Blue Butterfly Pea Flower Cream Cheese Layer:
400g cream cheese
250g heavy cream
100g powdered sugar
20g powder gelatin with 100g milk

Garnish:
Seasonal berries

Directions

1. Prepare the Base — Crush the cookies into fine crumbs using a food processor. Mix the crumbs with softened butter using a blender or spatula. Line the sides of a ring mold with acetate film. Spread the cookie mixture evenly on the bottom, pressing it down firmly. Refrigerate for 20 minutes to allow the base to set.

2. Prepare the Cheese Layer — Soak the gelatin in cold milk. Heat the bloomed gelatin in a saucepan over low heat until fully dissolved. Remove from heat and let it cool slightly. In a mixing bowl, combine the cold heavy cream, cream cheese, and powdered sugar. Start mixing at low speed, then increase to high speed. Beat until smooth and slightly increased in volume. Add the dissolved gelatin and mix until fully combined. Divide the cream cheese mixture into two bowls. In one bowl, add Suncore Foods® Blue Butterfly Pea Powder dissolved in ¼ cup of water. Mix until fully incorporated.

3. Pour the cream mixtures over the chilled cookie base, alternating between the plain and butterfly pea layers using two separate spoons or ice cream scoops. After each addition, tap the mold sharply to help the mixtures spread evenly.

4. Refrigerate for 1.5 to 2 hours until firm. Top with berries of your choice and Suncore Foods® Butterfly Pea Flowers.
