Chocolate Donuts:
150g white granulated sugar
150g all-purpose flour
24g dutch-process cocoa powder
1 ½ tsp baking powder
1 tsp fine espresso powder
¼ tsp fine sea salt
42g unsalted butter, melted
38g vegetable oil
1 large whole egg, room temp
113g full-fat sour cream, room temp
56g whole milk, room temp
1 ½ tsp vanilla paste
Chocolate Glaze:
56g whole milk
28g unsalted butter
113g semi-sweet chocolate, finely chopped
113g powdered sugar
1 tsp vanilla paste

1. For the Donuts — In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, espresso powder and salt. Set aside. In a separate bowl, whisk melted butter, oil, egg, sour cream, milk and vanilla until well combined. Pour wet ingredients into the flour mixture, and combine until no dry pockets of flour remain. Cover and chill the batter for 30 minutes. When you are ready to bake, preheat the oven to 350℉/180ºC. Spray a donut pan with a baking spray and set aside. Transfer the batter to a piping bag or ziplock bag. Snip the end and fill each donut cavity 2/3rds of the way full. For large sized donuts, bake for 10 to 13 minutes or until an inserted toothpick comes out clean. Mini donuts will take about 6 to 8 minutes. Do not over bake. Place leftover batter in the fridge to bake after. Let the donuts cool in the pan for 2 minutes, then invert them onto a wire rack to cool completely.
2. For the Glaze — Over medium-low, heat milk and butter in a small saucepan until the butter is completely melted. Add chopped chocolate, powdered sugar and vanilla and slowly stir until the glaze is smooth. Immediately transfer the chocolate glaze to a small bowl and let it cool for 3 to 5 minutes.
