Aqua Blue Velvet Cupcakes with Blue Vanilla Buttercream Frosting

Ingredients

Makes 7-8 Cupcakes

Wet Ingredients for the Cupcakes:
1 cup plant milk
1 tbsp vinegar
1/4 cup canola oil
1/4 cup melted butter

Dry Ingredients for the Cupcakes:
1 3/4 cup regular flour
1/3 cup caster sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp Suncore Foods® Aqua Blue Spirulina Powder
1 tsp pure vanilla extract
Pinch of salt

Ingredients for the Frosting:
100 grams dairy free butter (softened)
200 grams icing sugar
1/2 tsp pure vanilla extract
1/2 tbsp plant milk
1/2 tsp Suncore Foods® Aqua Blue Spirulina Powder


Directions

1. Preheat oven to 150 degrees Celsius.

2. First, add vinegar to plant milk; set aside while you prepare other ingredients.

3. Measure out and mix all dry ingredients in a large bowl, set aside.

4. Add melted butter, oil and milk mixture to a medium sized bowl; mix until incorporated.

5. Pour wet mixture to dry mixture, gently mix with a spatula until everything comes together.

6. Scoop butter to muffin pan lined with muffin liners; divide batter equally. It should be almost all the way full for each cupcake. Gently tap the pan to release air bubbles before transferring it to the oven.

7. Bake them for 15 minutes or until a toothpick insert and it comes out clean.
Once done, let them cool on a wire rack while you prepare the frosting.

8. To make the frosting; add butter to a large bowl; whisk until pale. Add half of the icing sugar, mix until everything comes together. Repeat for the other half.

9. Add in Suncore Foods® Aqua Blue Spirulina Powder, vanilla and milk; mix until everything is well incorporated.

10 Transfer mixture to a piping bag filled with a star tip; decorate and Enjoy!
