Almond Daisy Cookies

Glazed with Suncore Foods® Aqua Blue Spirulina, Red Beet & Yellow Goldenberry Powders, these cookies are an enjoyable treat to have throughout the day to keep the good energy going! A batch of these captivating, sweet, and chewy cookies will definitely bake your day any day!

Ingredients

Cookies:
1 1/2 cups all purpose flour
1/2 cup almond flour
1/2 cup powdered sugar
1/4 tsp salt
220g dairy free butter
40-45g almond milk
1 tsp almond extract

Royal Icing:
4 tbsp aquafaba
1/2 tsp cream of tartar
1 tsp vanilla extract
3 cups sifted powdered sugar
1-2 tsp Suncore Foods® Aqua Blue Spirulina PowderSuncore Foods® Red Beet Powder & Suncore Foods® Yellow Goldenberry Powder for the color


Directions

1. Cookies — In a large bowl add flour, almond flour, powdered sugar, salt and butter, mixing until combined. Add in milk, almond extract and mix until the dough comes together. Wrap cookie dough with cling wrap and refrigerate for 20 mins. Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 10 mins. Allow cookies to cool completely.

2. Make the icing — In a stand mixer, beat aquafaba with cream of tartar and salt until foamy. Add all powdered sugar and beat on low speed until thick. Beat in Suncore Foods® Aqua Blue Spirulina PowderSuncore Foods® Red Beet Powder & Suncore Foods® Yellow Goldenberry Powder and beat until thickened. Thin the icing with water to the desired consistency.
