Watermelon Popsicles

Ingredients
Watermelon Pink Pitaya Layer:
¾ cup fresh watermelon cubed
½ cup apple juice
Squeeze of fresh lime juice
1 teaspoon Suncore Foods® Pink Pitaya Powder
1 teaspoon Suncore Foods® Red Beet Powder
Optional: 1 teaspoon maple syrup
Coconut Vanilla Layer:
2 to 3 tablespoons full-fat coconut milk
1 to 2 teaspoons maple syrup or sugar to taste
¼ teaspoon vanilla extract
Matcha Basil Layer:
½ cup apple juice
¼ to ½ teaspoon Suncore Foods® Midori Jade Matcha Powder
1 sprig fresh basil muddled
Drizzle of maple syrup to taste
Directions
1. Watermelon Pink Pitaya Layer — Blend until smooth. Pour into popsicle molds to fill about three-quarters full. Freeze until semi-set, about 1 hour. Fills approximately three-quarters of each mold.
2. Coconut Vanilla Layer — Whisk together until smooth. Gently pour over the pink layer. Freeze until lightly set. Fills approximately three-quarters of each mold.
3. Matcha Basil Layer — Stir to combine and let basil steep for several minutes. Strain if preferred. Pour as the final layer. Insert popsicle sticks and freeze completely, at least 4 hours or overnight.
4. Serving Tips — Let pops sit at room temperature for 2 to 3 minutes before un-molding. Enjoy!
