Pink Pitaya Glazed Quinoa Flakes Cookies

Ingredients
Quinoa Flake Shortbread Cookies:
1 cup dairy-free butter
½ cup sugar
1 teaspoon pure vanilla extract
¼ teaspoon salt
8 oz. Suncore Foods® Snow Quinoa Flakes
½ cup brown rice flour
1 teaspoon baking powder
Pitaya Rose Icing:
1 cup powdered sugar
1 teaspoon Suncore Foods® Pink Pitaya Powder
2 tablespoons plant-based milk
A handful of Suncore Foods® Rose Petals
Directions
1. Preheat the oven to 325 degrees F. In a stand mixer using the paddle attachment, or you may alternatively use a hand blender, cream together the butter and sugar until smooth and creamy. Next add the vanilla extract and salt to the butter mixture.
2. With the mixer on low, slowly add the Suncore Foods® Snow Quinoa Flakes, brown rice flour, and baking powder. Continue mixing on low until well combined and a cookie dough forms.
3. Turn the cookie dough out onto a piece of parchment paper and roll the dough out to about 1/2-3/4 inch thick. Use a round cookie cutter and cut the dough into rounds. Place the cookie dough rounds onto a parchment-lined baking sheet and bake for 15-17 minutes. Allow the cookies to cool completely before icing.
4. To ice the cookies, sift the powdered sugar into a bowl, then whisk in the Suncore Foods® Pink Pitaya Powder. Add the milk and whisk until smooth, and all of the powdered sugar is dissolved. The icing should be a thick paste-like texture.
5. Spoon icing over the cookies however you’d like and sprinkle with Suncore Foods® Rose Petals. Allow the icing to set for about 20-30 minutes.
6. Cookies are best enjoyed right away. Keep leftover cookies stored in an airtight container in the fridge or freeze in an airtight container for later!
