Graham Cracker Crust:
170g graham cracker crumbs
25g brown sagar
72g unsalted butter

Lemon Layer:
310g sweetened condensed milk
108g freshly squeezed lemon juice
2 large egg yolks

Lavender Taro Layer:
227g heavy cream
1 1/2 tsp Suncore Foods® Lavender Flower Buds
50g granulated white sugar
50g + 25g water, divided
1 1/2 tsp unflavored gelatin
1 tbsp Suncore Foods® Lilac Taro Yam Powder
1 tsp Suncore Foods® Purple Sweet Potato Powder

1. In a small bowl, combine heavy cream and Suncore Lavender Flower Buds. Cover and refrigerate overnight.

2. Graham Cracker Crust - Preheat the oven to 350f (180c). In a mixing bowl, combine graham cracker crumbs, brown sugar and melted butter. Firmly press the crumbs into a 9-inch (23cm) tart pan, with a removable bottom. Bake for 10 minutes and let cool in the fridge for 15 minutes. Keep the oven on.

3. Lemon Layer - In a medium bowl, whisk together sweetened condensed milk, lemon juice and yolks until well combined. Pour the mixture into the cooled crust and bake for 10 minutes. Allow the tart to cool in the fridge for at least 2 hours.

4. Lavender Taro Layer - To a small bowl, add 25 grams of water. Sprinkle the gelatin powder over the water and let bloom for 5 minutes.

5. Next, strain heavy cream into a small saucepan and discard the Suncore Foods® Lavender Flower Buds. Whisk in the sugar and set aside.

6. To a small bowl, whisk together 50 grams of water, with 1 tablespoon Suncore Foods® Lilac Taro Yam Powder and 1 teaspoon Suncore Foods® Purple Sweet Potato Powder until dissolved (okay if a bit lumpy). Add it to the cream mixture and whisk until incorporated.

7. Lastly, add the bloomed gelatin.

8. Over medium-low heat, and whisking constantly, heat the mixture until it just reaches 140f (60c).

9. Strain the mixture into a medium bowl, preferably with a spout, and let cool for 10 minutes.

10. Remove the tart from from the fridge and pour the lavender taro cream over the lemon layer. Chill for at least 3 hours before serving.
